碾茶
碾茶（てんちゃ）は、蒸し製緑茶の一種。抹茶の原料。玉露と同様、収穫前に被覆した茶葉を蒸し、碾茶炉で乾燥して製造する。煎茶のように茶葉を揉む工程が無いため、形状は青海苔に似ている。その香気は玉露同様独特のかぶせ香があり、適度に香ばしい。抹茶とはこの碾茶を石臼で挽いて粉末状にしたものであり、その保存に用いられたのが茶壺（葉茶壺）である。中国茶の一つである甜茶（てんちゃ）は別の物。
