手揉み茶
手揉み茶（てもみちゃ）手揉みは煎茶本来の製法。摘んだチャノキ|茶の若芽の飲用成分を抽出し易くし、かつ保存性を高めるために、まずこれを数秒から数分間蒸した後、焙炉（ほいろ）と呼ばれる40℃から50℃に加温された台の上で、手で茶葉をほぐす、こねる、揉むなどの作業を行って乾燥させながら煎茶に仕上げてゆく。手揉みにはチャノキ|茶の産地毎に数多くの流派がありそれぞれに手順が異なるが、総じて1回に煎茶数百グラムを得るのに4時間から7時間を要し、力を使う重労働であるために後継者が不足している。また、手揉みを生かすだけの質の良い茶葉も入手しにくくなっているため、希少価値は高まる傾向にある。出来あがった手揉み茶は針状で艶があり、湯を注ぐと元の茶葉の形が現れる。その茶は山吹色で、手揉みならではの深い香りと味わいがある。
